The Flat Iron Steak, also known as a top blade steak, is cut from the shoulder of the cow. Though a flavorful and relatively tender cut of meat, in the past, the top blade roast had a flaw; a tough piece of connective tissue running though the middle. With advances in the technology, the connective tissue is now removed from the cut before it reaches stores and consumers leaving an amazingly tender cut of meat that is perfect for grilling. The steak is best cooked medium at most and not recommended to steak eaters who like their beef well done. Give it a try, you may find it’s the most tender steak yet.
